Amelia's is a production bakery that specializes in hearth-baked bread in the Italian tradition, using a mix of modern technology and old-world techniques with long fermentation times. They bake fresh bread every morning for use in their connected restaurant Bluebeard (a James Beard-nominated establishment) and for retail sale. While not a traditional donut shop, Amelia's pastry offerings — including croissants, morning buns, and seasonal specialties — are among the best in Indianapolis.
