General Porpoise comes from James Beard Award-winning chef Renee Erickson, one of Seattle's most celebrated culinary figures, and the pedigree shows in every bite. Opened in 2016, the shop specializes in brioche doughnuts with rotating seasonal fillings that achieve a perfect ratio of cream to pillowy, airy dough — never too sweet, never underfilled. The vanilla bean custard is the signature, but the seasonal fruit fillings using Pacific Northwest produce are where the kitchen really shines. The Pioneer Square café has a minimalist, Scandinavian-inspired aesthetic with excellent specialty coffee, making it as much a destination for the atmosphere as the doughnuts.
